we’re starting a BBQ restaurant, what size(#) hogs do i buy for my pit?
Living in central Ohio should i buy from local producers or the farm market? Where do i get my hogs processed? How many #’s of pulled pork can i expect from each? I want to use hickory to smoke the meat,where can i find a unlimited supply of hickory firewood? Can i buy a large supply of just ribs somewhere? where? I also need prices for all these things:wood,whole processed hogs, ribs for figuring a business plan
I’ll venture a guess and say you don’t even have a location picked out yet for your dream. Your “business plan” starts when you find your location and go to the City for your business and Health permits. A phone book is going to be your best Friend when you start to call wholesale meat processors and start to compare prices on whole, half, cut and section pieces of swine. While you have that book open for a change of mental pace, call “firewood” companies and get prices on cored of the wood of your choice, log, chunk or chipped. In preparing your “business plan” I’ll assume you did your demographic research on demand for your type of offering and have a good Idea of demand of prepared product. If so then you know how much product to purchase and won’t be standing holding a whole bunch of hog you can’t sell. You didn’t state what size or the dynamics of your pit, gas, gas and wood, wood only, direct or indirect and cubic feet. A smoked hog, whether whole, halved or cut will produce 66% of useable lean product. This is just the beginning, I wish you good luck, you won’t die from lack of sleep, I didn’t.
